Learn to cook traditional Lappish delicacies with help of professional chefs
On this cooking course you will learn some practical receipts and methods for cooking in Lappish style. All the dishes and receipts are planned so that you can use them even home and surprise you friends with your talents. You also will get some self made marmalade and a Lappish cooking book to bring home.
Day’s programme
After breakfast transfer to Taivaanvalkeat in a small Lappish village called Köngäs. The day’s programme and dishes to be cooked are introduced. after that the group will pick some of the ingredients from the pure nature. Depending on the season there are lots of fresh ingredients to be collected, for example birch and spruce buds, herbs, berries, vegetables and mushrooms. Also fish will be catch from the nearby river. Fresh milk for homemade cheese will be brought from the nearby farm.
The first course to be made is traditional Lappish salmon soup, which will be also served for lunch. After lunch the group will be divided into three smaller groups (starters, main course and desert), although the recipes and cooking methods of each course are explained for each participant. After that each group will start cooking with help of our chefs.
Some examples of the dishes
(the range can vary depending on the season):
Starters: slightly salted fish ( trout, salmon, white fish ), smoked fish, creamed forest mushrooms, self made country bread etc.
Main courses: by open fire glow fried salmon, grilled fish, on the wooden stick grilled reindeer meat and game sauce. The absolute highlight is to make “the robbers steak” which is digged in earth with vegetables under burning fire for hours to be roasted very smooth and delicate.
Desserts: berry marmalade, blueberry mousse, crepes and oatmeal cookies etc.
After cooking lessons there is time for relaxation, your own program or for a traditional sauna bath on the riverbanks of the Ounasjoki-river (extra charge). The dinner will be served on wooden planks in beautiful surroundings of the Taivaanvalkeat. In the evening transfer back to Levi.
